Are these a thing? They need to become a thing. These fancy pants quesadillas are incredible, if I do say so myself. 4 ingredients. 5 minutes. Very successful meal. It does not get easier (or better), I promise.

One of the coolest feelings in the world is to walk outside and pick a fresh fruit or vegetable with your hands, give it a quick polish with your sleeve, and take a big bite. That is my kind of heaven. I think we often forget how accessible food really is. All you need to do is grow it, and let’s be honest, it does all the growing, you’re really just supervising.

I recently watched a TED talk about urban farming and heard one of the most profoundly obvious things ever. The speaker plainly pointed out that

“Growing your own food is like printing your own money.”

YES. EXACTLY. GENIUS. INSPIRING. This man spoke to me. I think being connected to your food is important in life. But it is so basic, we tend to forget about it and usually take it for granted. I know it is not feasible for every person to grow their own food, but little things like supporting farmers markets and buying seasonal produce make a huge difference.

What does all this have to do with quesadillas? Right, well, it’s what’s on the inside that counts! So this morning I did this really cool thing where I walked outside and picked a persimmon off a tree and then walked a little further and plucked some arugula out of the ground. Sure I could do the obvious thing and make a salad, but it’s cold out there! So I ended up smashing these fall flavors between two hot tortillas with some cheese. It’s going to be a really good day. Persimmon Arugula Quesadillas

Ingredients
  • 2 tortillas (I used corn, but whatever you prefer)
  • 1 persimmon, thinly sliced (I used my trusty mandolin)
  • 1 handful arugula (or any soft leafy green!)
  • A few slices of white cheese (any cheese you fancy)
Instructions
  1. Lightly oil frying pan and warm up tortillas over medium heat. Layer cheese, persimmons, and arugula between tortillas, or use the folded quesadilla method. Dillas are done when the cheese is melted. Serve immediately.
